RECIPE TIP
Taleggio is a semi-soft cheese with an edible rind. Its naturally pungent flavor complements the other flavors.

INGREDIENTS
1 lemon
3 ounces spring mix
8 ounces burrata cheese
2 ounces taleggio cheese
2 tablespoons flour
1 pound pizza dough
1 tablespoon truffle oil
2 tablespoons pistachios
1 tablespoon honey
1 piece parchment paper
2  tablespoons +1 teaspoon olive oil
kosher salt
black pepper

EQUIPMENT
rolling pin (optional)
baking sheet

1. Prepare Ingredients
Preheat oven to 450°F. Halve lemon. Rinse spring mix. Remove burrata from container, discarding excess liquid. Transfer to a plate. If necessary, trim and discard rind of taleggio and shred or finely chop (see Recipe Tip).

2. Roll Out Dough
Sprinkle flour onto a clean dry surface. Using a rolling pin or the heels of your hands, roll and stretch pizza dough to about 1⁄4-inch thickness.

3. Bake Pizza
Rub 1 teaspoon olive oil onto a parchment-lined baking sheet. Carefully add pizza dough and using a fork, lightly pierce all over, leaving a 1-inch border. Sprinkle over taleggio, then drizzle over truffle oil. Season with 1⁄4 teaspoon kosher salt and pepper as desired. Transfer to bottom rack of oven and bake until crust is golden and cheese is melted, about 15 minutes.

4. Make Dressing and Chop Pistachios
While pizza bakes, whisk together juice of 1⁄2 lemon and 2 tablespoons olive oil in a large bowl until fully combined. Season with 1⁄4 teaspoon kosher salt and pepper as desired. Roughly chop pistachios. Use remaining lemon to brighten a glass of water.

5. Season Pizza
Sprinkle pistachios over baked pizza. Break burrata into pieces and dollop on top. Drizzle over honey, return pizza to oven, and bake until burrata is just warm, about 3 minutes.

6. Plate Pizza
Add spring mix to bowl with dressing and toss to coat. Cut pizza into slices and serve with salad alongside. Start eating! Store any leftovers refrigerated in an airtight container for up to 3 days.
