- 8 ozs kale, destemmed and chopped
- 1 cup carrot, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 spring onion, finely chopped
- 1/4 cup peanuts for garnish
