1 tablespoon olive oil

2 cups assorted fresh vegetables (see Note), cut into bite-size pieces

6 large eggs

3 tablespoons skim milk

1/4 teaspoon salt

1/4 teaspoon black pepper

2 1/2 cups cubed cooked turkey breast
 - 
1 cup diced smoked Gouda (4 ounces)
 - 
1 tablespoon chopped fresh parsley

Pour egg mixture into skillet. Cook over medium-high heat for 5 minutes, stirring gently halfway through cooking. Sprinkle remaining 1/2 cup cheese over top of mixture, and transfer skillet to oven. Bake at 325 degree F for 20 minutes. To serve, gently slide onto plate and cut into 4 servings. Garnish with parsley.
