We make our pimento cheese by hand, in small batches, to order. Yes, by hand! It’s a mixed-milk recipe, utilizing hormone-free, sharp white cheddar, creamy chèvre, smoked Gouda, sun-dried tomatoes, fresh, oven-roasted banana peppers, an all-natural cage-free egg mayo and no artificial preservatives, and it is soy, gluten and lactose-free. This unique combination of fresh ingredients makes an innovative hors d’oeuvre or recipe addition. Stuff and broil mushroom caps and Roma tomatoes or create a canapé of beef tenderloin atop seeded flatbread with our goat cheese pimento cheese and caramelized onions. Alternatively, use it to build a roulade of chicken, wilted spinach and sautéed onion or toss the cheese with hot pasta to make its own creamy, flavorful sauce. Our jalapeno and banana peppers are grown in NC and we roast and process them by hand. We are the only pimento spread on the market to utilize cage free eggs, all natural mayo and we use just enough cheese to make it spreadable. The are only two machines in our kitchen a cheese spreader and a dishwasher- our spreads are still mixed and packed by hand in order to maintain texture and quality control.
