Peanut Butter Bubble Waffles

 makes 3-4.


Recipe adapted from the instructional booklet my waffle maker came with.

2 egg yolks
3 egg whites
3/4 cup cake flour
1/4 cup + 2 tablespoons sugar
3/4 teaspoon baking powder
pinch of salt
1/4 cup + 2 tablespoons milk
1/2 tablespoon vanilla extract
3 tablespoons butter, melted
1/4 cup creamy peanut butter

Separate the eggs and discard one of the yolks (or save it if you're making scrambled eggs or something later). How to make bubble wafflesIn a large bowl sift together the cake flour, sugar, baking powder, and salt. Add in the egg yolks, milk, and melted (and slightly cooled) butter. Stir together. Add the peanut butter and stir until creamy.

In the bowl containing the egg whites, whisk the eggs until they become foamy/frothy. Gently fold these into the batter until just combined.

Pour about 1/3 cup of batter into the ready waffle iron and cook according the directions.How to make egg wafflesMy CucinaPro bubble waffle maker's instructions directed me to flip the maker just after pouring the batter. Weird, right?

You could also use this batter in a Belgian waffle maker, so don't feel like you HAVE to have the exact same waffle maker as me. Whatever waffle maker you use just follow the manufacturer's directions, as cook time may vary slightly.Peanut butter wafflesIf you want your waffle to be a little easier to fold, here's a tip. As you remove it from the waffle maker drape it over a drinking glass turned on its side. The waffle will gently fold around the glass as it cools.
