½ English cucumber, cut paper thin (should yield about1/2 cup sliced cucumber)
4 tablespoons rice vinegar
½ teaspoon sugar
½ pound ground pork
1 teaspoon sesame oil
2 teaspoons olive oil
2 teaspoons soy sauce
1 teaspoon fish sauce
½ teaspoon sirracha (or more if you like spice)
½ cup low-fat mayo
1 ¼ teaspoon sirracha (or more if you like spice)
½ teaspoon sesame oil
½ teaspoon rice vinegar
Salt to taste
1 tablespoon sesame oil
2 cups shredded mozzarella cheese
½ cup cilantro
Preheat oven to 500 degrees. Put pizza stone in oven.
In a medium bowl combine carrots, radish, rice vinegar and sugar. Set aside.
In a medium non-stick skillet, heat 1 teaspoon sesame oil and two teaspoons olive oil to a medium-high heat. Add pork. Cook until brown and crispy, about five to seven minutes. Add soy sauce, fish sauce, sesame oil, hoisin and sirracha. Toss to coat. Remove from heat and set aside.
Roll pizza dough out on flour coated parchment. (This will make for easy transition to and from the oven)
Brush sesame oil over pizza. Cover with cheese and pork. Slide pizza (along with parchment paper into the oven). Cook until pizza is golden brown and cheese is melted, about eight minutes.
While the pizza is in the oven, make the sauce. Combine mayo, sirracha, sesame oil and rice vinegar. Season with salt to taste.
Once the pizza comes out of the oven top with pickled carrots and radish and sliced cucumber. Sprinkle cilantro over. Drizzle with spicy sauce.
